Keeping bread mold-free and fresh as long as possible while on-shelf helps enable more flexibility and less waste during distribution, in storage, and at the home. Additionally, delicious baked goods must deliver on consumer expectations of freshness with pleasant softness, aroma, and taste profiles.
Formulators utilize many different methods for bread preservation. The current industry-standard preservative, Calcium Propionate (CalPro), is not considered a clean label ingredient, therefore natural mold inhibitors (NMIs) are used as a clean label alternative. Commonly used NMIs are a category of fermented/cultured carbohydrates that are produced using inputs such as wheat, starch, dextrose, or whey.
Rising demand from label-conscious consumers to eliminate ingredients like CalPro has prompted North American bakeries to increase their use of NMIs. Despite this, NMIs cost more by weight and require a higher level of use to achieve the shelf life comparable to when CalPro is used. These factors result in a very high cost in use, limiting the applicability of NMIs in the market today.
Furthermore, using NMIs can impart unpleasant sensory attributes to baked goods, particularly in terms of flavor and aroma. These negative attributes can be especially noticeable at the high levels necessary to successfully extend shelf life in breads.
